Animal Rescue centre to pay tax?

I have been contacted by my local guinea pig rescue, they are only very small (less than £1000 per year in donations), they are not a registered charity but are a non-profit making organisation so to speak. They are worried that they are not recording income and expenses and that they would have to pay tax. They say their expenses are double the donation income so no tax would be due but should they register as self-employed. I'm a bit confused. :blushing:
Any advice would be appreciated.
Many thanks
