It's still a project whether you use the simulation or not. The simulation is just the material you use instead of doing it work-based - a simultated company if you like.

As long as you need. It's a project. I would plan to do it an two or three hours at a time over a period of several weeks rather than in one big rush.

Exactly. You are encouraged to base it on your actual workplace. I started to, but mine was being all kinds of unhelpful, so I ditched that project and did the simulation. It's just an extended case study really. If nothing else, it gives you plenty to write about without stepping on anyone's toes.
