Firstly .... dont panic!! Really take your time with the VAT return as this is an essential part of the exam.
I have been completing VAT returns for years so thought unit would be a breeze, learning the reasons 'why' entries go in specific boxes makes the process a whole lot easier.

I've copied this from a post I made just after I sat the ITX exam:
It was similar to the practice assessments, there's a mix of word questions and calculation questions, the VAT return is the most important bit. Make sure you can do a VAT return and know what is supposed to go in each box.
As per your textbook, make sure you're comfortable with sales/purchases outside the UK, schemes, errors, and the basic bits at the beginning i.e. registration, documents etc.

I did mine on Thu. Make sure you know about the tax points as there's bound to be a q on that, know which documents you have to keep for vat returns too.
