Try starting with the simple stuff - overview of the company and market, diagrams in the appendix of the company and finance function structures, any of the 'general' mapping points (from memory don't you have to give the function of a finance department for example? Although this should be tailored to the company it's pretty straightforward).
From there I did a SWOT analysis of the whole business (useful as an appendix). That gave me a summary to work from when looking at what main points I wanted to focus the rest of the project around.
It's actually not that difficult once you jump in and start.
