Any experiences of small/craft distillers?

Hoping someone can help!
I have been approached by a potential new client who is looking to commence his craft distillery (vodka) business in the coming months. Unfortunately I have no experience with this kind of business so I am considering my options in accepting the engagement.
The client expects to be trading below the VAT threshold and the product is made and sold wholly within the UK. My understanding is that regardless of all of this excise duty is payable on the spirits at a rate of £27.66 per litre of pure alcohol produced and quarterly duty returns are required. Is this correct?
It is not yet clear whether the client intends to sell directly to the general public or within the trade in regard to AWRS.
Is there anything else I need to be thinking about?
And does anyone know where I can find examples of production records for this kind of business in producing the duty report?

I expect the client will be expecting me to do the bookkeeping including the duty return which is making me hesitant. But I've now had a look at the W5 and it looks fairly straight forward.
I understand the client also has to keep detailed production records but I'm unsure exactly what information is required. Any further advice?0 -
