In the exam is the only evidence we have to upload the items noted in the Documentation of Evidence list? We shouldn't take additional screenshots/reports as we are going along to prove what we have done, right?

Yes, the only things you upload are what they've asked for. The Audit trail will show everything you've done throughout.0
