Accounts for a Pub...

I have just started to do the accounts for a local pub. They sell food and they use the "wastage" from the food stock for their own consumption. (e.g. when the use by date is nearly up) I believe there is a living allowance which can go in the accounts as drawings, but I can't seem to find out how much this is. Should I just work out an estimated value of stock used for private consumption?
Any ideas would be gratefully received!!!
Thanks
