So I started a job in industry as accounts assistant. There is 1 accountant above me and that is all.

What qualifications would I need to gain all the skills and everything to do full accounts at the industry place or would it always require 2 people?

For AAT it doesn't require 2 people. Other accountancy bodies are more strict, e.g. ICAEW there must be an ACA/FCA member or adviser. I also work in a job with one accountant above me. So long as you get the necessary experience in the areas you are interested in.
